Sting Ray with tomatoes


This is similar to the cauliflower with tomatoes,only this time I used sting ray and egg white

Ingredients

250 gm to 300 gm of sting ray
one tomato - cubed
one onion - sliced
pinch of salt
one egg white
4 to 5 tbsp of ketchup
80 to 100 ml of water (depending on dilute or thick you want for the sauce)

Method

1. I steamed the sting ray with some ginger slices. When steamed, discard any liquid collected in the steaming dish and remove the ginger slices. Set them aside
2. Fry sliced onion till fragrant, add tomatoes , ketchup and water.
3. Boil them and add pinch of salt
4. When boiled add egg white and stir fry for a while and pour sauce over the sting ray.



Very yummy and best eaten with rice.

This recipe is really exotic. I seldom see the use of sting ray this way. Yes, it bears close resemblance to the cauliflower with tomatoes. In one you use beaten egg and in another egg white.

We also do cauliflower but I will call it a simple or bland cauliflower. The one I cook for does not like too much seasoning and condiments. So everything is reduced to minimal. With our cauliflower you will typically find cheese and pepper. Nothing much more in terms of embellishment.
