This is a wonderful dish for when you may be too tired to actually cook..or just want something quick and easy...
It uses a rotissirie chicken from your favorite supermarket..and this is major wonderful.
You will need:
2 cups finely chopped rotisserie chicken,skin removed
1/2 cup hoisin sauce, plus additional for dipping
3 medium green onions,thinly sliced...about 1/2 cup
1 small tart apple, unpeeled and finely chopped,,.. about 1/2 cup
1 1/2 teaspoon rice vinegar,unseasoned
1/2 cup chopped walnuts
12 Boston lettuce leaves,washed and dried
Stir the chicken, 1/2 cup hoisin sauce,onions,apples,rice vinegarand walnuts together in a bowl.Spoon about 1/4 cup of the chicken mixture in the center of a lettuce leaf, leaving a small border on each side. Roll into a cylinder and repeat with the remaining leaves...serve them seam side down, with additional hoisin for dipping if desired........
This recipe doubles and triples well....I just have plenty hoisin for dipping. I love the stuff..
