2 slices bacon, chopped
1 large onion, chopped fine
1 egg, well beaten
2...... 16 ounce cans cream-style corn
2 Tablespoons flour
1 Tablespoon sugar
1/4 cup milk

Brown the bacon and onion,; mix the egg and corn..stir that into onion mixture.
Blend together the flour, sugar and milk. Stir into corn mixture.
Pour into greased casserole dish....
Bake @ 350 for 45 min. - 1 hour

Berries on a Cloud..** Low Fat Recipe
2 cups fresh red raspberries
4 teaspoons raspberry liqueur, optional
1.........8 ounce carton lemon flavoured yogurt
1/4 of an 8 ounce container of thawed fat-free whipped desert topping..
3 Tablespoons sugar
~~~~~~~~~~~~~~~
Keep back 1/4 cup of the raspberries.
In bowl, toss remaining berries with liqueur if you choose to use the liqueur.
In small bowl, stir together yogurt and desert topping.
Spoon berry-liqueur into 4 desert dishes.
Dollop yogurt mixture onto berries.
Can serve immediately or chill up to 4 hours.
** Note
Just before serving, place the 3 Tablespoons sugar into a heavy saucepan. Heat over medium heat until sugar begins to melt, shake pan often to heat sugar evenly.
DO NOT STIR THIS NOW !!
Once the sugar starts to melt, reduce heat to low and cook about 5 minutes more or until sugar is melted and golden...now, stirring as needed with a wooden spoon.
Remove pan from heat..let stand for 1 minute.
Dip a fork into the caramelized sugar and let syrup run off tines of fork for several seconds before gently shaking the fork over the yogurt mixture............allowing thin strands of caramelized sugar to drizzle over berries.
If sugar starts to harden in pan..return to heat and stir until melted again.
Top with reserved raspberries..and serve immediately...

1...4 ounce package instant rice
rice. Take off heat and cover...let stand for 5 minutes.1....... 4 serving size package instant vanilla pudding mix
....... and the amount of milk called for on package of pudding...prepare pudding as you normally would.............next comes the rest of recipe

Maple Sausages and Skillet Potatoes

2....12 ounce packages thawed pork link sausages..( 24 total )
1/4 cup packed brown sugar
1/4 cup pure maple syrup..( can use also,a maple flavored syrup )
1 1/2 teaspoons dry mustard

Cook sausages according to package directions..and drain fat from skillet.
In small bowl, mix together sugar, syrup, and mustard.....add mix to skillet.
Cook uncovered for 3 to 5 minutes over medium heat..or until sausages are glazed, stir them frequently...Have potatoes ready and serve while all is hot

Pineapple Cheese Ball
2....8 ounce packages cream cheese, softened
1 mediun green pepper, chopped
1 small onion, chopped
1..... 8 ounce can crushed pineapple, well drained
1 teaspoon seasoning salt
2 cups chopped nuts

Mix together cream cheese, green pepper, onion, pineapple and salt. Mix well. Chill for several hours or overnight. Shape into a ball and roll in chopped nuts....
Serve with your favourite crackers..

Karen's Quick Yeast Rolls

2 3/4 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 package yeast
1 cup buttermilk, lukewarm
2 Tablespoons sugar
1/4 teaspoon baking soda
1 beaten egg
3 Tablespoons shortening, melted and cooled
Sift together the flour, baking powder and salt. Dissolve the yeast in warm buttermilk. Add the sugar, baking soda, egg and melted shortening,
Mix well and add to dry mix. Blend them together well.
Shape into rolls and let rise 1 hour.
Bake the rolls at 425 for 15 minutes.
this makes maybe 3 dozen rolls

Toss out on a floured board, pat it down and roll one-half inch thick. Cut into small rounds and bake in a hot oven.

Bake in a moderate oven from forty to fifty minutes. You will look far to find a better sponge cake than this when properly made and baked.

Pure Food Cook Book

This is one of the many older cookbooks I have..and as my collection grows..I thought I would share a few of the recipes and ideas.
This book was published in 1907 and was put out by a company advertising their shortening or cooking fat. I have to try some of the recipes..they actually sound quite good.., and I'm sure Crisco or your favourite brands of shortening can be used.
Reading through the introduction was wonderful and it was stated that an urgent request for just such a book as this be brought into being for the household in which the mother is "both housekeeper, cook and waitress". It was sadly noted that "eighty two per cent of the families in the country keep no domestic help".

Sarah's Sweet Potato Cake & Coconut Pecan Frosting

1 1/2 cups cooking oil
4 eggs, seperate yolks from whites
2 1/2 cups sifted cake flour
1/4 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon vanilla
2 cups sugar
4 Tablespoon hot water
3 teaspoon baking powder
1 teaspoon ground cinnamon
1 cup chopped nuts
1 1/2 cup grated raw sweet potato

Combine oil and sugar, beat until smooth. Add egg yolks and beat well. Add hot water, then dry ingredients which has been sifted together. Stir in potatoes, nuts and vanilla and beat well.
Beat egg whites until stiff, then fold into mixture.
Bake in 3 greased 8" cake pans for 25 to 30 minutes at 350 degrees.
Cool and frost...

Frosting for Sweet Potato Cake....

1 large can evaporated milk
1 cup sugar
1 stick butter
3 egg yolks
1 teaspoon vanilla
1 1/3 cups flaked coconut
1 cup chopped pecans

Combine milk, sugar, butter and egg yolks in a saucepan. Cook over medium heat, stirring constantly..until mixture gets thick..about 10 to 12 minutes. Take off heat, add the coconut and pecans, beat until cooled off and of spreading consistency.

1 1/2 cups cooking oil
4 eggs, seperate yolks from whites
2 1/2 cups sifted cake flour
1/4 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon vanilla
2 cups sugar
4 Tablespoon hot water
3 teaspoon baking powder
1 teaspoon ground cinnamon
1 cup chopped nuts
1 1/2 cup grated raw sweet potato

Combine oil and sugar, beat until smooth. Add egg yolks and beat well. Add hot water, then dry ingredients which has been sifted together. Stir in potatoes, nuts and vanilla and beat well.
Beat egg whites until stiff, then fold into mixture.
Bake in 3 greased 8" cake pans for 25 to 30 minutes at 350 degrees.
Cool and frost...

Oatmeal Pie

Ingredients
Pastry
210g plain flour
1 tsp milk powder
30g icing sugar

130g cold butter, cubed

120g castor sugar
250ml hot water

Method
Beat butter, icing sugar and egg yolk until creamy.
Sift in flour and milk powder to mix into a pliable dough.
Cover with a piece of tea towel and leave aside for 20–30 minutes.
Roll out pastry in between two sheets of plastic.
Stamp out 9–10cm circles of pastry with a pastry cutter.
Line egg tart patty tins with pastry circles.
Trim off excess pastry dough and prick the base with a fork.
Bake in a preheated oven at 160°C for 10–12 minutes.
Remove and cool slightly.
To prepare filling, dissolve sugar in hot water and stir in milk powder and salt.
Leave aside to cool, then add vanilla essence.
Break eggs into a clean bowl. Stir lightly with a fork, but do not beat.
Pour the cooled milk mixture into the eggs.
Stir to mix, then strain into a measuring cup. Leave aside.
Pour custard mixture till almost full into pre-baked pastry cases and bake at 180°C for about 15–20 minutes or until filling is set.

Chili
**** Fron Jana and Amy
3 pounds round steak or chili grind
2 Tablespoons vegetable oil
6 Tablespoons chili powder
1 Tablespoon dried oregano
1 Tablespoon cumin
1 Tablespoon salt
2 to 2 1/2 Tablespoons cayenne pepper
3 large cloves garlic, minced
1 Tablespoon Tobasco
1 1/2 quarts water..( enough to cover the meat by 1" )
1/2 cup white cornmeal or 3 Tablespoons masa harina (optional)

Trim steak of fat and cut into 1/4" cubes.
( When you choose meat. see if butcher will run thru a chili grind for you..CC ).
Heat a dutch oven, add the oil and get it hot..add the meat and brown on all sides.
Pour off all but 2 Tablespoons fat, and add remaining ingredients. Turn heat way down, put lid on..but leave large opening. Barely simmer for 1 1/2 hours. Check to make sure isn't drying out too much... Remove cover and simmer 15 minutes more.
If you want a thicker chili: Mix 1/2 cup white cornmeal or 3 Tablespoons masa harina with enough cold water to make a thin paste. Add to the simmering chili and cook another 15 minutes...

3/4 cups chopped pecans

Put gelatin in large bowl, stir in boiling water and mix for a couple of minutes..(until gelatin is dissolved). Stir in cranberry sauce, cold water and cinnamon. Chill about 1 1/2 hours, until slightly gelled. Stir in apple, celery and pecans. Pour into a 5 cup mold and chill maybe 4 hours..until firm.
To unmold...dip the bottom of mold into hot water...quickly turn onto serving plate....and serve.

Amanda's Noodle Candy

1/2 cups peanut butter
1....6 ounce package caramel bits
3 cups mineature marshmallows

Ingredients
400g plain flour, sifted
1/2 tsp salt
175g margarine
180ml cold water Filling
200g chicken fillet, diced
1 onion, diced
200g potatoes, diced
2 tbsp meat curry powder, mixed with enough water to form a paste
1 stalk curry leaves, use leaves only
2cm cinnamon stick
1 star anise
120ml water Seasoning
Salt and sugar to taste
1/2 tsp chicken stock granules
400g plain flour, sifted
1/2 tsp salt
175g margarine
180ml cold water Filling
200g chicken fillet, diced
1 onion, diced
200g potatoes, diced
2 tbsp meat curry powder, mixed with enough water to form a paste
1 stalk curry leaves, use leaves only
2cm cinnamon stick
1 star anise
120ml water Seasoning
Salt and sugar to taste
1/2 tsp chicken stock granules
Method
To prepare the filling, heat oil and fry onions until soft.
Add curry leaves, cinnamon stick, star anise and curry powder and fry for 1 minutes.
Add potatoes and fry for 2 minutes. Add chicken and fry for 1 minutes extra.
Pour in water and mix in seasoning.
Cover and cook until potatoes turn soft and filling is dry.
Dish out and cool the filling thoroughly. Put sifted flour and salt into a mixing bowl.
Rub margarine into flour until it resembles fine breadcrumbs.
Make a well in the centre and add in cold water to bind.
Turn the pastry onto a floured tabletop and roll out to 1/4cm thickness.
Cut into a round with a 5cm round pastry cutter.
Put a dessertspoon of filling in the centre of each pastry round.
Fold pastry into half to enclose the filling. Seal by pinching and fluting the edges.
Deep-fry curry puffs in hot oil until golden brown.
Drain on crushed absorbent kitchen paper.
Serve hot.

Bake for 25 minutes, or until brown, in a 350 oven. While still warm, cut in bars or squares. Cool before removing from pan.... Makes about 4 dozen

1 cup brown sugar
3 Tbls. maple syrup (I use maple flavored pancake syrup)

Heat and boil the above for 3 min. until bubbly.
Pour over the mixture below:

6 cups Crispix Cereal
1 can mixed nuts (12 oz can)
2 cups broken pretzels ( I like to use pretzle balls if you can find them)
Spread on a large cookie sheet and bake for 20 min.in a 350 degree oven... After 10 min. stir. This makes a nice size batch. No need to worry, it will be gone in no time at all.
However, it does store well in a Tupperware bowl.
*Remove from cookie sheet RIGHT away and put in a bowl or it will stick to pan. No need to grease pan.
Stir a few times after it is in the bowl.

German Sweet Chocolate Pie
I just hafta make one of these pies for my son. German Chocolate cake is his favourite..so long as it's "made the old way". I think he means..no mixes....

1 teaspoon vanilla
4 Tablespoons vegetable oil
2 cups grated apples

Beat eggs.., add vanilla and vegetable oil. Mix with first five ingredients and blend well. Add the grated apples. Bake in tube pan at 350 for 20 to 25 minutes.

2 cups chopped pecans
1/4 bar paraffin
1....( 12 oz. ) package chocolate chips
Buttered waxed paper

Melt caramels in the milk over low heat, add pecans.
Drop by teaspoonfuls onto buttered waxed paper. Chill.
Melt paraffin and chocolate chips in double boiler. Dip candies into chocolate and return to wax paper ...Chill

2 cups chili sauce
2 Tablespoon brown sugar
1 Tablespoon butter or margarine
2 Tablespoon cornstarch
1/2 cup juice from the beans
3 cups cooked rice
2 Tablespoons chives
1 cup shredded Cheddar cheese

Combine first 4 ingredients in pan and bring to boil.
Add cornstarch and mix in juice, cook until thick.
Mix in the rice and chives
Pour bean mixture into casserole dish, sprinkle cheese on top.
Heat through at 350 till the cheese melts
